Restaurant India News: Pendulo Launches ‘Cocktail Sway’—An Agave-Led Dining Experience in Mehrauli

Pendulo has introduced a new experiential format, The Pendulo Cocktail Sway: Agave & Antojitos Journey, a four-course tasting concept where cocktails take centre stage, paired with curated small plates.

Positioned as a departure from traditional food-first dining, the experience places the bar at the forefront, with each cocktail guiding the progression of the meal. The format blends Indian and Mexican culinary influences, drawing on shared flavour profiles such as spice, smoke, and acidity.

The concept has been developed under the direction of founder Sahil Baweja, who aims to reframe how guests engage with dining.

“With Cocktail Sway, we wanted to challenge the traditional structure of a meal. Here, cocktails lead the experience, and the food responds to them,” he said.

The beverage programme is led by Head Mixologist Kamal Kohli, with a focus on agave-based spirits and Indian ingredients. Signature cocktails include Litti Picante, Rasmalai Caliente, and Pahadi Mezcal Sour, each designed to reflect a cross-cultural narrative.

The accompanying antojito-style menu has been curated by chefs Megha Kohli and Noah Louis Barnes, with execution led by Chef KD. Dishes such as Lamb Dhokla, Coorgi Asado Octopus, Pochury Pork Chaat, and Gunpowder Mushroom Empanadas have been developed in tandem with the cocktails to ensure complementary flavour pairings.

Adding to the experience is a live sitar performance layered with Latin rhythms, reinforcing the Indo-Mexican theme that runs through the menu.

Located at One Ambawatta in Mehrauli with views of the Qutub Minar, Pendulo continues to focus on immersive, narrative-driven dining formats that integrate food, beverage, and cultural elements.
