
Fairmont Jaipur has rolled out a major health-focused overhaul of its culinary operations, replacing refined oil with nutrient-rich alternatives. Following a month-long review of cooking methods and menu categories, the hotel has shifted to desi ghee and mustard oil for Indian dishes, and olive oil and cold-pressed canola oil for Western, Pan-Asian, and other global cuisines.
The initiative underscores the hotel’s commitment to wellness-driven dining without compromising flavour or authenticity. By adopting cooking mediums rich in Vitamin E, Vitamin K, and essential omega fatty acids, Fairmont Jaipur aims to enhance nutritional value while reducing the use of heavily processed fats. To further strengthen regional ties, the hotel is now sourcing mustard oil and desi ghee directly from local village communities supporting rural livelihoods and ensuring higher freshness and quality.
The move aligns with rising demand for cleaner, provenance-led food among both international travellers and Indian diners. With wellness becoming central to luxury hospitality, Fairmont Jaipur is positioning itself as a leader in conscious, health-forward dining.
The culinary team is also reviewing menus, training, ingredient mapping, and cooking techniques to build a long-term framework for wellness-led cuisine, including chef upskilling and deeper collaboration with local farmers and artisanal producers.
