Comorin Brings Regional Indian Cuisine and Curated Bar Program to Mumbai

Comorin, operated by EHV International under the Old World Hospitality group, is set to open its Mumbai location on 27 May 2025 at Nilaya Anthology in Lower Parel. Known for its interpretation of regional Indian cuisine and curated beverage offerings, Comorin expands its footprint beyond Gurugram with this launch.

The Mumbai outlet continues the restaurant's approach of balancing regional culinary inspiration with contemporary presentation. Designed by Russell Sage Studio in collaboration with Incubis Consultants, the venue includes an architectural extension into The Orangery at Nilaya, offering an outdoor seating area. The original concept was created by Rishiv Khattar, Director at EHV International.

Comorin’s Mumbai menu, curated by Brand Chef Dhiraj Dargan, features a range of dishes from across India. Some of the offerings include Raw Banana Dahi Vada with Mint Motichoor; Achari Beetroot with Nagpur Oranges and Tadka Dahi; Sweet Corn Khichdi with Sem Ka Beej; Himachali Cha Gosht with Til Pudine Ki Chutney; Aam Ki Kadi with Khoba Roti; Cheeni Malai Toast; and Honey Caramel Gulgule served with Ginger Candy Ice Cream.

The bar program, developed by EHV International’s Head of Bars, Varun Sharma, includes a mix of craft cocktails, sous vide infusions, cocktails on tap, and house-made sodas. Featured drinks include Neer More, Walnut Sour, Fennel Paloma, and Mango and Fig Highball. A selection of batch-bottled cocktails, such as Khus Vermouth Negroni, Coffee Manhattan, Gibson, and Smoke and Agave Martini, will also be available.

Kevin Rodrigues, Head of Wines at EHV International, has developed a wine list offering over 50 labels by the glass. The program is designed to promote wine accessibility and personalized tasting without the need to commit to full bottles.

The Mumbai location marks Comorin’s continued evolution as it aligns regional cuisine with metropolitan hospitality preferences, while maintaining consistency with its brand ethos across cities.

However, the pandemic brought operations to a sudden halt, forcing the business to rethink its model.

From those uncertain times emerged a bold new vision—Bean & Coffee + Kitchen as a neighborhood café that celebrates community, quality, and innovation. Today, the brand operates multiple divisions, including cafés, corporate catering, and an artisanal bakery, Bakehouse.

"We wanted to create a safe, welcoming space where people could enjoy a meal or even work comfortably," shares Shreya Ghai. "That vision is what continues to drive us forward."

Neighborhood Cafés with a Community Focus

The pandemic underscored the importance of human connection. Recognizing this, Shreya reimagined Bean & Coffee + Kitchen as a neighborhood café designed to be a home away from home. With indoor and outdoor seating, thoughtfully curated menus, and a focus on freshly brewed coffee, the café concept quickly resonated with patrons.

"Our vision was to make Bean & Coffee a community space—a home away from home," says Shreya Ghai. "Whether it’s grabbing breakfast, catching up with friends, or working with a cup of coffee, our cafés cater to every mood."

The success of the café model also laid the foundation for the brand’s expansion into catering and artisanal baked goods.

Corporate Catering Success Stories

Beyond neighborhood cafés, Bean & Coffee + Kitchen carved out a niche in corporate catering. Collaborations with prestigious institutions like IIT Delhi and FITT opened doors to high-profile clients, including TCS, the Indian Army and Navy, and various government ministries.

"Building strong relationships, delivering consistent quality, and being reliable have been key to securing these partnerships," says Shreya. "We tailor our services to each client’s specific needs and ensure seamless execution."

The catering arm continues to shine, handling everything from intimate boardroom meetings to large-scale events, proving that adaptability and professionalism can win even the toughest markets.

Expanding Horizons

In line with its vision of growth, Bean & Coffee + Kitchen recently launched a new café in Panchsheel Park, a prime area in Delhi. This chic destination blends urban elegance with a cozy neighborhood vibe, making it a hotspot for early risers, professionals, and families.

"The opening of our café in Panchsheel Park was inspired by the growing demand for cozy, neighborhood breakfast spots," shares Shreya. "It’s designed to cater to early risers, families, and professionals looking for a great start to their day or a place to unwind."

The Artisanal Bakery Division

A key addition to the Bean & Coffee + Kitchen ecosystem is Bakehouse, the brand’s artisanal bakery division. Focused on small-batch production and premium ingredients, Bakehouse supplies baked goods to both retail and B2B markets.

"Bakehouse was created to bring fresh, handcrafted baked goods to our customers," explains Shreya. "From breads to cookies and tea cakes, we emphasize quality and innovation."

With dessert tubs, tea cakes, and cookies gracing café shelves and event tables, Bakehouse stands out for its flavor, freshness, and attention to detail.

Managing diverse operations—cafés, catering, and a bakery—requires stringent quality checks. For Shreya, consistency begins with hiring passionate, skilled chefs and empowering teams with training and robust processes.

"A chef who understands how to cater to clients’ unique requirements ensures that our food and service exceed expectations," notes Shreya. "This, combined with strict quality controls, guarantees high standards across all touchpoints."

Expanding the Bean & Coffee Legacy

Growth remains central to Bean & Coffee + Kitchen’s roadmap. Upcoming plans include expansions into Gurgaon, Goa, and Mumbai, along with new retail opportunities and experiential dining formats.

"Expansion is a key part of our vision," says Shreya. "We’re also exploring workshops and collaborations to enhance customer engagement."

Five Years Forward

Looking ahead, Shreya envisions Bean & Coffee + Kitchen as a household name in cafés and bakeries, known for its safe, community-driven spaces, innovative offerings, and high-quality service.

"In five years, we see Bean & Coffee as a household name," shares Shreya. "Our focus will remain on building community spaces and innovating to meet customer needs."

From a single cloud kitchen to a thriving multi-division enterprise, Bean & Coffee + Kitchen epitomizes resilience and reinvention. Its journey underscores the power of adaptability, community focus, and an unwavering commitment to quality.
