
Gurugram has added a new contemporary dining venue with the launch of Novy, developed by Culture Cauldron Chefs Ashay Dhopatkar and Neha Lakhani. The restaurant introduces a modern approach to global and European-inspired cuisine while maintaining an accessible and balanced style. The name Novy, drawn from the ideas of “novelty” and the Scandinavian word for “new”, reflects its focus on thoughtful evolution rather than trend-driven cooking.
The menu is built around comfort, experimentation, and flavour pairing. Key dishes include Edamame Momos in Pandhra Rassa with crispy leeks, Grilled Avocado with Seaweed, Haleem Croquettas à la Kiev with mutton haleem and korma emulsion, Scallop Ross Omelette with truffled eggs, Paella Socarrat with spiced Nimbu mutton, and Bangkok Pump, an aerated Thai curry with enoki crisps. The beverage program follows the same philosophy, using classic spirits, indigenous flavours, and house infusions to create balanced, craft-driven cocktails.
Novy’s 70-seat interior has been designed to offer a streamlined dining journey across intimate and open spaces, supported by warm tones, soft lighting, handcrafted elements, a visible kitchen, and curated music.
Chef Ashay Dhopatkar brings over two decades of global kitchen experience, including time in Michelin-starred European restaurants. He explains, “At Novy, we wanted to genuinely approach food without being confined to any single cuisine and to create comforting flavours by combining unexpected elements like Lamb Chops with Fermented Black Garlic and Bihari Mustard Oil, or Tibetan Momos with Kolhapuri Pandhra Rassa. Flavours that aren’t forced together, but simply work in harmony… even our bar nibbles explore distinctive yet balanced tastes.”
Pastry Chef Neha Lakhani adds, “At Novy, we wanted desserts that bring joy — from a nostalgic Delhi Falooda served with Jello to a rich Pistachio Tiramisu that begs for just one more bite!”
