Denzil Franklin, Head Mixologist, Sixteen33, Mumbai shares, “The Sherly village blend encapsulates the village’s essence in a glass—an elegant balance of traditional ingredients with a modern, creative twist. Crafted with millet-infused whiskey, this cocktail brings a touch of earthy finesse, enhanced by the delicate floral notes of chamomile shrub. The citrus adds a refreshing zing, while the green apple foam crowns the drink with a crisp, evoking the simplicity and freshness of Sherly’s natural surroundings. We also have a cool Negroni called the ‘Nut’ which is a mix of Peanut Butter Bourbon Whisky, Banana Campari Negroni that we serve up.”

The Foreseen Challenges:    
Indian whisky producers face several challenges that impact their operations, profitability, and growth.  Mokksh Sani, The Founder of Living Liquidz and Co-Founder of The Glenwalk mentions, “Challenges such as High Excise Duties and Taxes, Regulatory Framework, different RTM across all the markets delay or slow down product expansions. In order to overcome the same, we need to engage persistently with government agencies and industry associations to advocate for policy reforms that reduce excise duties, simplify regulations, and promote a more favorable business environment. W.r.t to the consumer, it is an ever-evolving exercise to understand new and trending consumer preferences and maintain our relevance.”

And more on the home front in India, I think our state regulations, when it comes to the rules on what the excise duties are, what the VAT policy is, and definitely on a central level when it comes to customs duty, which is far too high, those are barriers that we face for sure.”

The year 2020 has been a roller coaster ride for the F&B industry almost like the plot of a Bollywood movie.

 

The industry that thrives on social gatherings has seen a paradigm shift in terms of consumer choices and has transformed itself by adopting means to earn consumer confidence.

 

“The pandemic didn’t stop foodies from showing their love for different delicacies and their fondness for eating out - North Indian food was most missed, casual dining was most popular, premium whisky and brownies continued to remain the preferred choice of alcohol and dessert for diners, with Ahmedabad alone ordering 1,10,000 brownies,” shared dining trend by Dineout.

According to the report, it also mentioned that, Bangalore, the alcohol capital of India, chugged down 5,466 liters of liquor in February 2020 alone. Whereas, Hyderabad, the city of buffets, continued picking up the most food in buffets. However, Goa grew into the new city of love for it had the maximum reservations for tables for two, while Agra & Ludhiana had the maximum reservations for tables of four. 

When it comes to dining out, dinner outings have increased to 63% post-COVID as compared to 55% before COVID, added the report claiming that 58% of Indians chose to go out for dinner, while only 24% liked going out for lunch, except in Hyderabad where 40% of the populace preferred eating out during lunch. 

“The year 2020 has been unprecedented for the restaurant industry as it suffered a severe downfall like never before. But, the industry has emerged from months of shutdown by fundamentally altering its operations and by setting new standards. In December alone we’ve clocked 100 Crore worth of transactions and that shows how promising 2021 is going to be,” shared Ankit Mehrotra, CEO & Co-founder, Dineout.

The report indicated that 15,000+ restaurants opted for the Contactless Dining suite from inresto. There was a 151% growth in Digital Menu transactions in the last 5 months indicating that the restaurant industry is slowly recovering and adapting to the new normal. Average transaction value also increased by 26% from INR 1610 pre lockdown to INR 2026 post lockdown.

In a country where alcohol business is seen as a complex bureaucratic process and where each of the 29 states regulate their own laws on it, a recent report by IWSR, says that despite all the roadblocks, Scotch whisky in India has witnessed double digit growth of 11% volume growth.

 

India being the sixth biggest global destination for Scotch whisky has a significant influence on the global whisky market. “Demand is being fuelled by a rising consumer base of young consumers who are becoming more affluent in a country where the global reach of some of the smaller cities is becoming more significant, diluting the historical whisky sales bias towards the big three cities of Mumbai, Delhi, Gurgaon and Bangalore,” shared the report titled, ‘The volatility of the Indian whisky market’.

 

With the new affluent consumers preferring premium products, the value of whisky market in India is increased by 17% last year. According to the report this is a long term trend, with the average price of whisky in India nearly doubling in ten years to $7.18 for a litre.

 

In 2017, the liquor industry reported a major blow in their sales figure as a result of Supreme Court’s ruling on banning the sale of alcohol within 500 meters of nearly all state and national highways. Consequently liquor companies projected a decline of around 10-19% sales due to this.

 

On the contrary in 2018, the liquor industry got a boost by no new regulatory or tax interference. “The premuimisation process resumed and prompted the emergence of some pioneering and cult Indian whiskies; companies like John Distillers and Amrut Distillers are raising the bar for Indian whisky,” the report mentioned.

 

Most of the younger brands in the market are trying to contemporize the category of Scotch whisky to make it more appealing and accessible, be it the young drinkers or the 35 years old plus ones. “Restaurants and bars now have started to include whisky in cocktails which is making the category more relevant to the female drinkers too,” it added.

 

“Currently, the Indian Whisky category is strong: its innovation is bringing new consumers into the category and is building its profile among whisky purists, both internally and externally. Whether this trend will continue with the ever-present threat of Federal or State disruption remains to be seen; the category is prone to taking one step forward and two steps back following government regulation or tax changes.” the report added.

I started my career as a trainee bartender in Trident, Gurugram. I agreed to join because The Oberoi Group was always the dream for every IHM graduate. Somewhere, that day was the first day of my conscious resolution towards mixology.

It was Keshav Prakash's fascination for the untold and unsung histories of fine spirits which led him on a journey to far off lands - Guyana, Guadalajara, Haiti, Kentucky, France, England, Scotland, Italy, America, Mexico, Japan - in search of these spirits and their distillers. During his travels, he also met the 'maestros of fine spirits' - Charles MacLean, Dave Broom, Tomas Estes. Considered as legends in their respective fields, they further fuelled Keshav's passion by sharing with him their knowledge of the most boutique and rare spirits sourced from the remotest corners of the world. Back home, Keshav decided to share these experiences with other like-minded people. And, thus, The Vault was born in 2012 to offer a never before curated collection of artisanal whiskies, rums, tequilas, cognacs, gins and other spirits to connoisseurs and the F&B (food and beverage) trade industry.

Keshav Prakash was also inducted as the Keeper of the Quaich by the Scotch Whisky Industry.

When the Spirit Story is All About Travel

My spirit story is all about travel. Whenever I travel, I preplan and meet people, especially mixologists from around the world. They are akin to chefs. All my travels - be it Carribean Island, Hakka, Tequila Town, Japan - I like meeting people who have a passion for spirits.

The Handcrafted Beverage Culture in India

Indian spirits and wine industry is very promising and growing. The handcrafted beverage culture in India is growing phenomenally. Especially in the last two-three years, it has grown big time. I see this because when I started The Vault four years ago, I had to struggle so much to tell people about our drink but now people come looking for it. Even if you see the menus at restaurants, especially The Bombay Canteen, there is a big change in the portfolio. The fact that Xico restaurant has an all-tequila menu is amazing.

I feel beverage portfolio go through a sea change in restaurants. It’s no longer the standard cut, copy, paste where almost all the restaurants would serve the same or similar menu because of the limited availability. Now, it is no longer the same. There are so many options.

Bars at Indian Hotel Restaurants vs Standalone Restro Bars

Both are very different. The large hotel chains have a different kind of national policy and a budget. In standalone, you have an individual passion and some of them take it through; the passion of the owners immediately shows up in standalone restro-bars.

Whiskey has a Big Consumption in India

Definitely, whiskey has a big consumption in India. Yet I can see there is a strong search of gin in the last year or so. It will be limited to a small pool of high-end restaurants and hotel bars. Still, gin is making a good on the road. India will always remain a whiskey country.

People Prefer Drinking Classic Cocktails at Restro Bars

In the home they go for an expensive drink, something they bought during their travels and bars while at restaurants they go for classic cocktails; it varies a lot from age to age. You can see the older ones not experimenting so much. The younger audience is open to experiments a bit more.

Initiatives to Promote a Safe and Responsible Drinking Culture in India

The very fact that we share stories about the spirits is to encourage people to actually spend time appreciating drinks rather than you not drinking too much. That is why we arouse interest in something. For example, when you grasp an interest into craft spirits the appreciation is high; and when the appreciation is high you are approaching things in a very different manner. It’s like fine food. You don’t eat a lot of fine food because the whole way it is kept, served, story-telling, there are lots to know, you tend to eat not that much. Similarly, with appreciation comes responsibility and being careful. We are very much anti towards drink driving.

How has whisky session evolved in India?

I think there is a lot to do with the culture. The concept of whisky testing is a very new concept in India. In my opinion people are afraid to taste scotch drinks. What we will be doing is something different; to provide entertainment and make people taste the product. People in India are very brand oriented. We started giving choice to consumers because the entire whisky brand is not available in India because of FSSAI and other legal parameters.

What is overall whisky consumption in India and globally?

In terms of whisky in general India is the largest consumer of Whisky in the world. My top selling brands ballantine’s do 74 million bottles globally and Royal Stag which is available in India sells 180 million bottles. India is a very competitive market. France, China and US is some of the top markets. And, today everyone is telling India is the next.

Which is the highest selling whisky in India today?

In India by volume Chivas Regal is the highest selling whisky.

How about Ballantine’s?

Ballentine’s consumption is quite low. UK is the expensive place to buy whisky. In France we do about 9-10 million boxes, but here we do 600 thousands boxes. So, over all in Asia India is among top ten market for Ballentine’s.

What is the number of sell for Chivas as compared to Ballentine’s?

We are doing 74 million boxes of Ballantine’s and around 40 million boxes for Chivas because of the price difference they have.

What is the challenging in bringing brands to India?

In India if you import you have to pay minimum 100-150 per cent taxes on alcohol. Meanwhile, FSSAI is testing all the ingredients. That’s the reason smooth companies are not operating in India, bouquet whisky is not present in India.

Which is the top consumption market for whisky in the world?

France is the largest scotch whisky market in the world, China, America, India is big, Japan is being big, Africa is pushing things up, Brazil is big in certain markets.

FSSAI which has been setting safety measures for noodles and milk has now turning towards alcoholic beverages with plans to set up standards for drinks, including beer and whisky, reported PTI.

The Food Safety Standards Authority of India will come up with a draft notification on the standards of alcoholic beverages in next two months.

"Work is going on to prepare standards for alcohol and alcoholic beverages, in next two months the FSSAI will come up with draft notification seeking comments from the public," said a senior official.

According the official drinks like whisky, vodka, gin, beer and even breezer will come under the proposed standards.

Earlier this year, a meeting of the Central Advisory Committee had also discussed having standards for alcohol and alcoholic beverages.

It was decided that once standards for alcohol and alcoholic beverages were finalised it shall be intimated to all states and UTs so that they may suitably advise the respective excise departments.

In terms of packaging, FSSAI has already proposed that alcoholic beverages, pan masala and supari may not be treated as "unsafe food" for recall just because they carry a mandatory warning on their covers.

It is mentioned on pan masala, supari and liquor that their consumption is injurious to health.

The proposal has been made in the Safety and Standards (Food Recall Procedure) Regulations, 2015, which has been put up for public comments.

"In the case of alcoholic beverages, pan masala, supari, the mandatory mention of warning 'consumption of alcohol/ pan masala/ supari is injurious to health' may not be treated as unsafe food as part of any recall plan unless the beverage or food is determined unsafe as per the classification of recall making it injurious to health or even causing death," the proposal said.

These draft norms were put up for public comments on May 29 and the deadline ends on August 1.
