Chef James Biaka
Executive Chef, Kofuku

With more than 20 years of experience in cooking and 10 years of professional cooking and kitchen management experience, Mr. Biaka (zamlalbiak)specialises in Japanese cuisine and has knowledge of Korean, Thai and Chinese. Presently, he is an Executive Chef in Kofuku.

He also has experience in planning, menu setting for restaurants and banquet menu, kitchen and service staff training, handling the kitchen, controlling food cost, food quality, food presentation, even purchase, etc.

He has earlier worked as a Sous Chef under a Japanese chef in Dahlia, a Japanese restaurant in Chennai. He was the Head Chef in Kyung Bong Kong Korean and Japanese restaurant in Chennai. He has also worked as an Executive Chef in Indage Hotel Tetsuma and Prive Japanese restaurant in Mumbai.
