Kinny is the Executive Chef at InterContinental Marine Drive and is a vital element of the heart of the hotel—the F&B setup.

Most chefs’ cook to feed the stomach but Chef Paul makes food that nourishes the soul. He brings with him more than 17 years of fruitful experience behind the kitchen counter and in front of it, taking care of Management as well as F&B in Hotels and Restaurants. The innovative chef has an exceptional record of service in renowned establishments such as the Taj Group of Hotels, Gourmet Restaurants Pvt Ltd (Tendulkar’s) and Impresario Entertainment and Hospitality Pvt Ltd.

Paul completed his schooling through the Bombay Board and followed it up with a Diploma in Hotel Administration and Food Technology from Sophia’s Polytechnic, Mumbai in 1992. Immediately after, he started a decade long career with the Taj Group of Hotels where he worked as a Trainee Chef. Within a span of 8 years, he was promoted to Junior Sous Chef and 2 years later, became the Sous Chef. Thereafter, he joined the first celebrity restaurant named after Sachin Tendulkar in Colaba as the Executive Chef and held that position for 2.5 years.

Paul then moved to Dubai for a year to open the modern fine-dine Indian Restaurant “Ushna” at the Souk of Madinat Jumeirah as the Executive Chef.
